There's Nothing Like Pineapple!

One of the sweetest fruits of all, pineapple peaks for a day and then starts to deteriorate. You should sniff the bottom to see if there's a sweet (but not fermented) aroma and check to make sure that it feels heavy and firm. You can't ripen pineapples after they've been picked, so make sure to get a good one for your sauces, garnishes, salads, desserts, or special treats for the grill.
PINEAPPLE BERRY SMOOTHIE
1 -2 C fresh pineapple chunks
1 C vanilla nonfat yogurt
1 medium, ripe banana, quartered
1 C pineapple juice
1/2 C fresh frozen strawberries
1/2 C ice cubes
Combine pineapple, yogurt, banana, pineapple juice, strawberries and ice cubes in blender or food processor container. Cover; blend until smooth. Garnish with strawberry and banana slice, if desired.

GRILLED CHICKEN AND PINEAPPLE
1 -2 C fresh pineapple ring slices
1 C pineapple juice
2 Tbsp lemon juice
1 Tbsp extra virgin cold-pressed olive oil
1 tsp dried oregano leaves, crushed
1 tsp garlic powder
5 boneless, skinless chicken breast halves
Combine pineapple juice, lemon juice, oil, oregano and garlic powder in large, shallow, non-metallic dish. Reserve 1/4 cup. Add chicken to remaining marinade, turning to coat all sides. Cover and marinate 15 minutes in refrigerator. Discard marinade.
Grill or broil chicken and pineapple slices, brushing occasionally with reserved marinade, 5 to 10 minutes on one side turn over. Add pineapple slices to grill with chicken and brush with marinade 10 minutes or until chicken is no longer pink in center. Discard any remaining marinade.

HOW to PREP a PINEAPPLE
You can cut a pineapple by hand or use an inexpensive pineapple cutter. If you are cutting by hand, do the following:
1. Cut the top and the bottom off so that you have a cylinder.
2. Cut off the peel.
3. Cut out diagonal wedges to remove the eyes.
4. Turn the pineapple to a vertical position and cut the pineapple vertically into four or six wedges.
5. Cut the hard center away by cutting the inner slice of the wedges away.
