I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Citrus Fruitatta

1 pear small, peeled and diced
1/3 cup dates chopped pitted
8 eggs
1/2 cup milk
1/2 teaspoon orange rinds grated
1/4 teaspoon salt
2 oranges medium, sectioned and well drained (about 3/4
1 grapefruit small sectioned and well drained (about 1/2 cup)
Powdered sugar (optional)


Preheat oven to 350°. Generously butter an 8 1/2 x 1 1/2 x 1 1/2 -inch quiche dish. Evenly distribute pear and dates in dish. In a medium bowl, beat eggs, milk, orange rind and salt until well blended. Pour into quiche dish. Bake for 10 minutes. Arrange orange and grapefruit sections over egg mixture. Bake 20 to 25 minutes longer or until set. Let stand for 5 minutes before serving. Sprinkle with powdered sugar; cut in wedges.
