4 tablespoons butter, unsalted (1/2 stick), at room temperature
4 potatoes, medium (each about 6 ounces), cut into 1/4-inch slices
2 tablespoons soy sauce
2 tablespoons sesame seeds, toasted
1 clove garlic, thinly sliced
2 scallion, both white and green parts, trimmed and finely chopped
Salt and freshly ground black pepper, to taste
1. Set up the grill for indirect grilling and preheat to medium.
2. Prepare the packages, toping the potatoes with a mixture of soy sauce, sesame seeds, sliced garlic, and chopped scallions. Season with salt and pepper before closing the packages.
3. Grill and serve, warning everyone to watch out for the hot steam, which will escape when the packages are opened.
