Canning Chutney
Notes from Folks...
Is it possible to preserve the SPICY PEAR CHUTNEY into a preserving jar rather than just chill in fridge.

Hi Irene,
As you're probably aware, the USDA has strict guidelines on foods for canning. Only certain recipes are approved for safety, taste, and storage life. These recipes can be found at your local extension agency and also online.
As you also know, many of us home canners use recipes that have never been "officially approved" but have been passed down from Mother to Daughter for decades. "Well it's never made any of us ill," is the common phrase heard at canning season.
With that said, you can certainly try to process this chutney based on recipes similar to it, but you do so at your own risk.
Below, I've posted a link to some canning information. You'll find different recipes and sources to help you decide if you want the risk of canning the chutney. I also recommend looking in the Ball Blue Book for chutney recipes, and following their timetables/methods if you wish to pursue this. You can pick this up in the canning section of major grocery stores, Wal-Mart, and any canning supply outlet. You can also order it directly from the Jardin company (link below).
You may find an "approved" chutney recipe in there that will give you the best of both worlds (1. a quick recipe to be served immediately and 2. a processed recipe to be served later in the year) .
