I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Recipe Sharing

Thanks to Sandi, one to of our wonderful newsletter readers...


I am enjoying Cook'n and your recipes. I thought that I would send a recipe that I have been making for years. It is kind of a toss together so I don't have an exact ingredient list but I am going to try to come close.

Stuffed Pumpkin

1 lb of ground beef
2 sliced onions
3 cups of mashed potatoes
1 10 inch pumpkin
1 teaspoon salt
1/4 teaspoon pepper

Saute the onion and add ground beef. While it is cooking, remove top of pumpkin and clean inside to remove all seeds and strings.

Drain beef mixture and add mashed potatoes, salt and pepper. Mix until blended.

Fill pumpkin with meat mixture, cover with top and bake in a water bath at 325 degrees until fork can be easily inserted into pumpkin.

Sometimes, I use half a pumpkin by covering it with foil and use the other half for pies and cookies.
