Lemon Rice
Serves: 6
Download this recipe.
1 clove garlic, minced
2 cups chicken broth, fresh, from cubes, or canned
2 cups quick cooking rice (like Minute Rice)
1 tablespoon lemon juice
1-2 tablespoons parsley, fresh or dried
1 tablespoon butter
In saucepan, saute garlic in butter for 1-2 minutes. Add broth, and bring to full boil. Stir in rice, turn off heat, after 5-10 minutes add lemon juice and parsley, and serve. Great with fish or chicken dishes. Serves 6.
