Some things just defy explanation, such as this bread recipe. Who would have thought that these vegetables could actually make good bread? Give it a try!
Beet-Carrot Bread
Separate 3 eggs, beat yolks
Add 1 Cup butter
And 1 ½ cups sugar, beat all together
Then beat in:
1 Cup Shredded beets
1 Cup Shredded Carrots
2 tsp Baking Powder
1 tsp Salt
½ Cup Chopped nuts(optional) either walnuts or pecans
2 ½ Cups unsifted flour
1 tsp grated orange rind (don't skip the orange rind, it really makes this bread 'happen')
whip egg whites until fluffy and add last
Put into 2 greased and floured regular size loaf pans,
Sprinkle batter lightly with a small amount of sugar
Bake at 375° F for 45 minutes
