Potato flakes are the secret ingredient in these soft, chewy, delicately flavored cookies.
2 cups all-purpose flour
2 cups mashed instant potato flakes
1 cup sugar
1 cup firmly packed brown sugar
1/2 to 3/4 cup finely chopped nuts
1 teaspoon baking soda
3/4 cup margarine or butter, melted
1 teaspoon grated lemon peels
2 eggs
1/4 cup sugar
Heat oven to 350°F. In large bowl, combine all ingredients except 1/4 cup sugar; blend well. (Mixture will be crumbly.) Firmly press into 1-inch balls; roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets.
Bake at 350°F. for 9 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
