Quick and Yummy Snacks

Let’s face it — we all like to have a little snack every once in awhile — especially right around bed-time. I have friends who eat a bowl of cereal every night because they did it as little children. Actually not a bad idea; as we all know that milk helps us go to sleep. In case you would like to experiment with something new, here are some ideas.

Parmesan Popcorn

About 8 cups


1/2 cup popcorn kernels
4 tablespoons butter, melted
1/4 cup grated Parmesan
1/4 cup grated Pecorino Romano

Pop the popcorn using a large, heavy pot with a tight-fitting lid or a popcorn maker.
Coat the bottom of the pot with vegetable oil and heat over low heat. Drop in 1 kernel of corn and when it pops add the remaining corn, cover and shake pan. Continue to shake pan until all the corn has popped, being careful not to burn.
Place the popped popcorn in a large bowl. Drizzle with the melted butter and sprinkle with the cheeses. Toss gently to combine and serve immediately.

Bruschetta with Gorgonzola
Serves 6

36 slices (1/2-inch thick) baguette bread, about 1 loaf
1/4 cup extra-virgin olive oil
8 ounces Gorgonzola, sliced
3 tablespoons honey

Preheat the oven to 400 degrees F.
Arrange the sliced baguette on a baking sheet. Brush with olive oil. Bake until the bread is pale golden and crisp, about 10 minutes.
Arrange the cheese on the toasts and bake until the cheese is melted, about 3 minutes.
Drizzle the toasts with honey. Place on a serving platter and serve immediately.

Berry Easy Dessert

Serves 4


1 pint good quality Greek style plain whole milk yogurt
4 to 5 pieces crystallized ginger, grated
1/4 to 1/3 cup honey, look for orange blossom, clover or sage, plus some for drizzling
1 orange zested
2 pints black berries

In a bowl combine the yogurt, grated crystallized ginger, honey and orange zest. Let the yogurt mixture sit for about 5 minutes, the flavors will meld together a bit. Divide the blackberries between 4 dessert bowls, top with a large dollop of the yogurt mixture and then give each dollop a drizzle of honey for a sweet finish.
