I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Shrimp Alfredo

Serves: 4



  Download this recipe.

1/4 cup cream cheese
1/2 teaspoon garlic, minced
2 tablespoons butter
2 tablespoons onions, finely chopped
2 cups zucchini, peeled and shredded
1/2 cup grated Parmesan cheese
1/8 teaspoon salt
1 pound shrimp


1. Melt butter in frying pan. Add onion and cook until clear, but not browning. Add garlic, and shredded zucchini. Cook for 2 minutes

2. Cut cream cheese into small pieces and put in pan, add parmesan cheese, shrimp, and salt and cook until shrimp are done.
