Rustic Apple Crisp
Serves 8
Ingredients:
2 ounces pecans, chips, (smaller than pieces)1 pound Granny Smith apple, unpeeled (about 5 cups)
2 tablespoons water
1/2 teaspoon ground cinnamon
1/4 cup fat-free caramel ice cream topping, divided
2 cups low-fat granola cereal
1. Heat a 12-inch nonstick skillet over medium-high heat. Add pecans and cook 4 minutes or until just beginning to turn golden and fragrant, stirring frequently. Remove from skillet and set aside on separate plate.
2. Cut apples in half, core, and cut in 1/2-inch wedges. Return skillet to heat. Add apples and water and cook, uncovered, 4 minutes or until just tender-crisp, stirring frequently.
3. Remove skillet from heat and sprinkle cinnamon over apples. Drizzle 1 Tbsp caramel topping over apples and stir gently. Top with granola, cover, and let stand 1 minute to absorb flavors.
4. Place remaining caramel topping in a microwaveable bowl and microwave on HIGH setting for 15 seconds. Drizzle over granola and top with nuts to serve.
