Desserts to Die For:
Raspberry Bread Pudding

My friend made this for a dinner just the other day and I had to get the recipe. She lovingly added. "Have only one serving, My sister-in-law said enjoy it, and then don't have it for another year." The ingredients will testify to this, but it was just so good, I'll probably only be able to wait a month tops!

I am curious to experiment with other fruits, raspberry is not my favorite. Maybe blueberry? I also want to try making it with eggnog. Also, If you want to cut back on some of the fat and sugar, I think its just as good or better without the vanilla sauce. I bet you could also try using milk instead of cream and it would still be to die for. I can taste it as I type!


Raspberry Bread Pudding


Ingredients:
Cream Mix:
1 1/2 loaves aged, white bread
1 quart heavy cream
3 cups sugar
1 egg
1 teaspoon vanilla extract

Fruit Filling:
5 cups frozen raspberries
1 cup sugar
1/2 cup apple juice

Vanilla Sauce:
1 1/3 cups butter
5 tablespoons flour
3 cups heavy cream
2 teaspoons vanilla extract
1/3 cup sugar


Directions:
Cream Mix:
In large bowl, combine cream, sugar, egg, and vanilla. Cut bread into 1 1/2 inch cubes and add to cream mixture, coating bread well. Let stand 30 minutes, stirring every 5 minutes to allow the cream to absorb completely.

Fruit Filling:
Combine raspberries, sugar, and apple juice, stirring until sugar is dissolved.

Layer 9 X 13 dark baking dish 3/4 full with bread mixture, pour fruit filling over bread mixture spreading evenly. Top with remaining bread. Bake 40 minutes at 375 degrees Fahrenheit,. Serve warm. Top with vanilla sauce.

Vanilla Sauce:
Over medium heat, melt butter and add flour. Stir 10 minutes until it had a nutty aroma. Do not brown. Add cream and sugar. Bring to boil until mixture is thick, remove from heat, add vanilla. Serve sauce cold.

My friend used french bread instead and it tasted so good. To tell the truth, the crust pieces were my favorite part!
