S'More Fun

My favorite part of camping is roasting marshmallows and making s'mores. Don't get me wrong, I like other aspects of camping as well. It's great to be in the wilderness and the smell of campfire is intoxicating, but no camping trip, in my opinion, is complete without at least one S'More. I don't know what could be better than a marshmallow roasted to golden perfection and melty chocolate mashed between two graham crackers. It's the best when the marshmallow oozes out the sides. I realize that there are probably people who don't share my enthusiasm for these campfire classics. Maybe they don't like camping, maybe it's winter so a campfire isn't available, or maybe they don't have taste buds--just kidding! In any case I'm hoping that these twists on s'mores and s'mores inspired dishes will change their minds!
Tasty Variations:
- The Elvis: Graham crackers, peanut butter cup (instead of the chocolate bar), marshmallow and banana slices.
- PB & J: Graham crackers, marshmallow, peanut butter and jelly! Yummy!
- Oreo: Chocolate graham crackers, white chocolate, marshmallow and Oreo crumbles.
- Chocolate Grasshopper: Chocolate graham crackers, marshmallow and mint-filled chocolates
- Toasted Mocha: Snicker doodle cookies, dark chocolate with espresso and marshmallow
- Sesame caramel: Sesame crisp bread or thin crisp cracker, marshmallow, caramel-filled chocolate
Get creative and add anything you think would taste good to the mix!
Don't have time to go camping? That's okay here are a few S'More inspired recipes that can be made inside and are delicious!
S’mores Bars
Serving size: 8
Calories per serving: 635
2/3 cup sugar
1/2 cup butter plus 1 1/2 tbs, divided and softened
1/2 teaspoon vanilla extract
1 egg
2 1/3 cups graham cracker crumbs
1/3 cup flour
1/2 teaspoon salt
4 1/2 cups miniature marshmallows divided
2 cups semisweet chocolate chips
Directions:
In the bowl of your stand mixer, combine the sugar and 1/2 cup butter until light and fluffy, about 3 minutes. Add the vanilla and egg, scraping down the side as needed. Mix in the graham cracker crumbs, flour, and salt.
Set aside 1 1/2 cups of the graham cracker mixture for later. Using your hands or the bottom of a glass, press the rest of the graham cracker mixture into the bottom of the prepared dish.
In a small nonreactive saucepan, melt 3 cups of the marshmallows with the remaining 1 1/2 tbs butter. Quickly spread the melted marshmallows over the graham cracker layer. Sprinkle the chocolate chips evenly over the layers and toss the remaining 1 1/2 cups marshmallows on top. Press bits of the remaining graham cracker mixture in the palms of your hands and scatter them over top of the marshmallows and chocolate chips, pressing lightly.
Bake for 17-22 minutes or until marshmallows have puffed up and turned lightly brown. Allow to cool before serving.

S'mores Milkshake

Calories per serving: 494
3 cups vanilla ice cream packed
2/3 cup milk
4 large marshmallows toasted
2 sheets regular graham crackers
1/4 cup Jif Chocolate Hazelnut Spread
Directions:
Add the ice cream.
Mix in blender until smooth.
Add the marshmallows (these will be very sticky), graham crackers and spread.
Pulse several times until the last 3 ingredients are incorporated.
Serve and enjoy!

Tartelette: S' Mores Doughnuts
Serving size: 8
Calories per serving: 166
4 tablespoons unsalted butter melted, divided
10 graham crackers finely crushed
2 teaspoons superfine sugar
1 batch Basic Raised dough (recipe follows)
1 tablespoon milk or water
12 1 ounce squares milk or dark chocolate
48 mini marshmallows
Directions:
Prepare the dough as directed through the proofing stage. Roll the dough to just a bit more than 1/4 inch thick. Cut into 3 inch diameter rounds. Roll out half of the rounds to about 3 1/4 inch diameter. To assemble. lightly brush each wider round with milk or water and place a square of chocolate and 4 mini marshmallows in the center of each. Top with the smaller rounds and lightly pinch to seal. Then recut with the same cutter to seal the edges.
Fry the doughnuts as directed and let cool for only 3 minutes. Brush each doughnut with a little melted butter , then dip into the graham cracker mixture. Serve immediately.
