White Chocolate Raspberry Cheesecake- Need I Say More?!
My husband and I just celebrated our 4th anniversary. In some ways, I can't believe 4 years have already passed, and yet, with 2 kids and another on the way and all the experiences life has handed us, there are times I feel like it's been longer! I can't remember not being married to him- he is my best friend and true love all wrapped up in one adorable hunk:). I am definitely a lucky gal:). He treats me so well and I am very blessed to have him!
One thing I love to do for my husband is try new recipes or bake things that I know he will love. I love watching him chow down on something I have made- there is definitely something very satisfying about watching someone enjoy your hard work from the kitchen, but especially when it's your spouse.
Last Valentine's Day, I wanted to try something different. My husband definitely has a few favorites that I tend to fall back on, but because of the holiday and because we would be spending the evening at home (with two kids, a night out can sometimes be hard to come by;) ), I really wanted to make something special . I decorated our table with a red tablecloth and cute glass jars filled with pink/red sweets. I also made sure to pull out the candles for an extra romantic dinner;). I love how it turned out!
But another essential part to this experience was the menu. For dinner, I made a cheese bread and ceaser salad that my husband loves, along with his absolute favorite pasta dish. But for dessert, I wanted to try something a little different. I have made many sweets that my husband enjoys, but I wanted to try something a little more appropriate for a special occasion- I found the perfect recipe and I thought I'd share it with all of you since Valentine's Day is fast approaching.
It's White Chocolate Raspberry Cheesecake. This is the perfect dessert for those special occasions when you want something a little more special than your basic cookie or brownie recipe. This was my first time making cheesecake, and it was a definite success! My husband raved about it the entire time he was eating it, and I often caught him going back to the fridge for a small sliver (or two.. or three.. ;) ).
One great thing about this recipe is you can make the raspberry sauce a couple days ahead, which really helps out when you're stressed about getting all the baking done! It also has an Oreo crust, which is a definite plus! The cheesecake does have to set for 6-8 hours in the fridge, so it's definitely something you want to plan ahead when baking.
I also love how pretty it turns out! I didn't take a picture of the final thing unfortunately:(, but I did get a picture of the cake after it's baked and before the toppings:
