A Treat Fit for a Fiesta!! (Warning: Highly Addictive!)


I tried this recipe out a few months ago, but thought I would save it to share with you just in time for Cinco De Mayo! Cuz who doesn't need a little Mexican food lovin' in their life? I am seriously addicted;).

I don't know that you can really count these as authentic Mexican food, but I love them either way- I LOVE CHURROS. Whenever my husband and I go to a theme park, we immediately sniff out the closest churro cart. I could eat those things all day long… which is probably why it's a good thing I don't go to theme parks very often! We have a serious love of churros around here- which is why I knew I would have to try this Cinnamon Churro Chex Mix the minute I saw it! I knew there is no way it could imitate the soft crunch you get when you bite into an actual, warm delicious churro, but it might be a great substitute when you have a serious lack of fresh warm churros around your house;).

I will give a warning with this chex mix- it is highly addictive, and that's a really bad thing if you are prone to heartburn! When I'm pregnant I get some serious heartburn, and so I really couldn't eat a ton of it- but I ate way more than I should anyway;). Luckily my family was more than willing to help me out! But just a heads up if you get heartburn easily, you'll definitely want to take it easy when chowing down on this recipe!

But if heartburn is not an issue for you and you love anything cinnamon (who doesn't?!?), then you have definitely got to try this one! It'd be a great and unique addition to any Cinco De Mayo fiesta you might be having- or to any occasion that calls for delicious food- which is any day for me;).

This recipe calls for:

9 cups rice Chex cereal
3 cups cinnamon chips
1/2 cup powdered sugar
1/4 cup granulated sugar
1 1/2 tsp ground cinnamon

I only had one bag of Hershey's cinnamon chips, and so I did 2 cups of cinnamon chips and one cup of white chocolate chips- and honestly I don't think I would change it! The white chocolate gives it a richer flavor, and it is plenty cinnamon-y without that 3rd cup! But I bet it's amazing either way;).

Combine all the sugars and cinnamon, and pour the chex into a separate bowl. Melt the cinnamon/chocolate chips in the microwave and pour over the chex. Take about half of the sugar mixture and sprinkle it on the cereal, gently stirring to get everything coated. Spread out on a cookie sheet and cover the cereal with the rest of the sugar mixture.

Let it cool and enjoy!!




As I said, it definitely can't compete with the soft yet crunchy texture of a churro, but the delicious combination of sweet and cinnamon and crunch makes it a great alternative option!
