BLT Bowl

Just think of it as a BLT, without the bread and with a whole feast of other goodies thrown in for good luck.

Ingredients:

2 Romaine lettuce hearts, chopped
1 large avocado
2 handfuls of cherry tomatoes
half a cucumber
handful of cilantro
4 slices bacon
1/2 cup feta cheese
Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon mustard
juice of a small lemon
1 teaspoon sea salt

Directions:

Cook your bacon until it’s nice & crispy. While it’s sizzling away, chop everything else up into bite-sized squares. Throw it all in a bowl, followed by your bacon (chopped) when it’s done. Crumble your feta over the top.

For dressing, in small bowl, add dressing ingredients. Whisk together. Drizzle over salad and serve immediately.
