Strawberry Fields Forever

I don’t know if you’ve seen many commercials lately, but there is one Wendy’s commercial that has playing lately for their Strawberry Fields Chicken Salad where she talks about how nothing says summer quite like fresh, ripe strawberries. I think they have hit this campaign right on the head, with me at least, because after I see one of these commercials there is nothing I want more than to eat than their dang strawberry chicken salad! J


And I think it’s totally true that there is something so simply summery about strawberries. And what goes great with strawberries? Cream. Think about it, almost every strawberry dessert is paired with cream of some sort.


Straight up strawberries and whipped cream. Absolutely simple and delicious.

One of my other favorite strawberry desserts, specifically in the summer time because they are so refreshing in the heat, is Strawberry Poke Cake. This is a white cake that you poke a million times with a wooden spoon or something and then you pour strawberry jello over the cake, regrigerate it and smother it in whipped cream after it has set for a few hours. It is so light and refreshing; it perfectly hits the spot for a summer time favorite dessert.


There are so many other strawberries and cream desserts as well like strawberry shortcake, trifles, cheesecakes, cookies, you name it!

But let me tell you, I have been visiting in Idaho and Utah the last month and it has been HOT! I feel like they were having an unusually hot summer and I was in my mother-in-laws home most of the time where they don’t have central air conditioning, just a swamp cooler, so I was dying of heat. I had way more popsicles and ice cream than I would like to admit.

Anyway, when I got back to California, it’s actually still pretty hot here as well, so I couldn’t wait to get home to my ice cream maker and whip up a batch of one of my very favorite flavors for ice cream these days: simple strawberry ice cream.


This recipe is super easy to throw together since there are no eggs and no cooking it at first of any kind, so you can just quickly mix these ingredients together and throw them in your ice cream maker and ENJOY!

The recipe calls for mashed strawberries and at first, before giving it much thought I tried mashing them with a whisk. This was obviously harder than I thought and would have taken forever, when I realized—Duh! I have a wonderful Blendtec! Why am I not using this to mash those strawberries up in 2 seconds?! That is literally all it took for me since I like some strawberry chunks in mine.

simple strawberry ice cream

Ingredients:

2 cups whole milk

2 cups heavy cream

1 cup white sugar

1/4 teaspoon salt

2 teaspoons vanilla extract

2 cups mashed fresh strawberries

2 drops red food coloring (optional)

In a large bowl, combine the milk, cream, sugar, salt, vanilla, strawberries, and food coloring. Pour the mixture into the freezer bowl of an ice cream maker, and freeze according to manufacturer's directions.
