Easy Crockpot Shredded Chicken
This great recipe is so good to use in so many recipes. Make tacos, BBQ chicken sandwiches, enchiladas, with mashed potatoes and gravy, on salads - the list goes on and on.
Here is a tip to save fingers: Use your stand mixer with the paddle attachment to quickly shred the chicken.
Dovetailing Tip: Make a large pot of shredded chicken and use throughout the week. Remove 1 ½ cups for today’s meal, 1 1/2 cups chicken to use for Meal 3, Chicken Quesadilla’s and 2 cups for Meal 5, Avocado Chicken Salad. If you have leftovers, freeze it in recipe size portions.

Ingredients:
4 pounds | boneless, skinless chicken breast halves (about 8 large chicken breasts) |
2 teaspoons | salt |
2 teaspoons | pepper |
2 teaspoons | garlic powder |
2 cups | chicken broth |
2 teaspoons | all purpose seasoning (such as mrs. dash) - if you cannot find this, you can replace with 1/2 tsp of oregano & 1/2 tsp of onion powder |
Directions:
Place all ingredients into your crockpot and cook on HIGH for 4-5 hours or LOW for 6-7 hours. (These times are for fresh chicken. If you are using frozen, you will need to use the greater of the cooking times)
