BBQ Chicken Baked Potatoes
These baked potatoes are meals in themselves, with a smoky barbecue flavor that will make your mouth water. You can top them with your favorite cheese and garnish.
Dovetailing Tip: Bake 2 extra potatoes to use for the Meal 2 Potato Soup. When the potatoes are cool enough to handle, peel and dice them. Store until ready to use.
Dovetailing Tip: Wash, poke, and oil a medium sweet potato and bake it along with the potatoes. This will be be used in the Sweet Potato Biscuits for Meal 2.

Ingredients:
4 | medium potatoes, baked |
olive oil, to rub on potatoes | |
sea salt and freshly ground black pepper | |
1 1/2 cups | shredded cooked chicken breasts |
2 teaspoons | garlic powder |
1/2 | red onion, chopped |
1 cup | honey barbecue sauce |
1/2 cup | italian salad dressing |
1/4 cup | packed brown sugar |
1/4 cup | cider vinegar |
2 tablespoons | Worcestershire sauce |
1/4 teaspoon | liquid smoke, optional |
crumbled blue cheese and chopped green onion, optional | |
Directions:
Preheat oven to 425° Poke potatoes with a knife. Rub olive oil on potatoes. Salt and pepper potatoes, then place on a foil or parchment paper covered baking sheet. Cook potatoes in oven for 45-50 minutes or until soft.
Meanwhile, place chicken, garlic powder, and onion in saucepan. Combine the barbecue sauce, salad dressing, brown sugar, vinegar, Worcestershire sauce and liquid smoke if desired; pour over chicken, mixing sauce into chicken gently; heat through. Serve with potatoes, blue cheese and green onions if desired. Yield: 5 servings.
