Cajun Shrimp Tacos with Mango Salsa

Mango salsa and spicy cajun shrimp make these tacos a family favorite.
Dovetailing Tip: Double the ingredients for the mango salsa when making the Shrimp Tacos. Save ½ to use to top the Black Bean Soup for Meal 3.

Ingredients:
For Cajun Shrimp: | |
1 pound | large shrimp, shells removed |
1 tablespoon | butter |
2 tablespoons | cajun seasonings (or to taste) |
juice from half a lemon | |
For Mango Salsa: | |
1 | mango, peeled and chopped |
1 cup | cherry tomato, chopped |
juice from 1 lime | |
4 | green onions, chopped |
1 | jalapeno, seeded and chopped |
1/2 cup | cilantro, chopped |
salt and pepper to taste | |
For Tacos: | |
8 | 6" corn tortillas |
1 cup | coleslaw mix |
Directions:
To prepare the salsa toss all the mango salsa ingredients in a bowl and set aside until ready to assemble tacos.
In a large skillet melt the butter on high heat. Season shrimp with cajun seasoning and add shrimp to skillet. Cook until pink, shouldn't take more than a couple minutes. Turn off heat and squeeze half a lemon over the shrimp.
To assemble tacos, start with coleslaw mix, shrimp then salsa.
