Onion Rice

Simple and versatile rice side dish that everyone loves! I prefer to use brown rice in my recipes. 222 calories per serving.
Dovetailing Tip: Use the 2 cups of brown rice you prepared for Meal 3. Follow the recipe, except omit the water and reduce the chicken broth to ½ cup. You are only heating the rice (not browning it) after the onion is tender, approximately 10 minutes.

Ingredients:
1 tablespoon | olive oil |
1 | red onion, chopped |
1 cup | long-grain brown or white rice |
1 teaspoon | ground black pepper |
1 cup | chicken broth |
1 cup | water |
Directions:
Heat the oil in a saucepan over medium heat. Stir in the onion, and cook until almost tender. Stir in rice, and continue cooking until coated with oil. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.
