Make Ice Cream Bread With Only 2 Ingredients!


I came across something the other day that made me do a double-take. 2 ingredient ice cream bread! I am ALL about anything ice cream, so this definitely intrigued me. Can you actually make bread using ice cream?

Well we tried it- and it absolutely works!! My kids were so curious to see what would happen as I combined the 2 ingredients. I literally threw this together last minute on our way out the door because it’s that simple to make! You literally just use ice cream (whichever flavor you desire) and self-rising flour.


Throw those 2 ingredients in a mixing bowl and mix them together. You definitely want the ice cream to be softened, but not melted. And as tempted as you may be to lick the spoon- don’t. Remember, it’s a bread batter, not a cake batter- so it’s not going to be as sweet as it looks ;) Bake at 350 and voila! Fresh bread. From ice cream. If my kids didn’t think I was cool before, they definitely do now!

Some things to keep in mind with this recipe- this is a BREAD, not a CAKE. When you take a bite of this, thinking you’re getting a taste of sweet, delicious cake, it’s a little disappointing. However, if you remember that this is a bread, it’s delicious! It’s a very sweet, dense bread with which you could do all kinds of things!

I decided to use cookies n’ cream for our first experiment, and it was quite tasty! Again, it’s not as sweet as cake, but much sweeter than a typical slice of bread. I imagine this would make a killer pb and j! Or a sweet grilled sandwich!!! I can just imagine toasted marshmallow and nutella between slices of chocolate brownie ice cream bread! That just can’t be bad. This recipe just gets more and more exciting the more I think about all the possibilities! And not just with ice cream flavors- think of all the add-ins!

  • Butter pecan with butterscotch chips
  • Chocolate with dark chocolate chunks
  • Vanilla with cinnamon or poppyseeds
  • Rocky road with walnuts
  • Strawberry with freeze-dried strawberries or nutella swirls
  • Cherry chocolate chip with extra chocolate or dried cherries
  • Pistachio with an almond glaze

I’m so excited to try some of these- and the best part is it’s SO EASY. And your kids will think you’re the coolest chef ever, so win-win!

Ice Cream Bread Recipe

Homemade bread using 2 ingredients- ice cream and flour!

Cook time:
Yield: 1 loaf
Serving size: 5
Calories per serving: 240

Ingredients:
1.5 quart tub ice cream
3 cups self-rising flour
colored sprinkles (optional)


Directions:
Preheat oven to 350 F Let ice cream soften at room temperature for 10-15 minutes. In the bowl of your mixer combine ice cream with flour until the flour is incorporated. Evenly distribute sprinkles in the bottom of a greased Bundt pan and scoop batter evenly on top. Bake for 35 minutes until a toothpick inserted comes out clean. Invert and allow to cool completely.
