3 Tasty St. Patrick’s Day Snack Mixes
St. Patrick’s Day is coming up! It’s interesting to see how different everyone’s traditions are. Some don’t celebrate it at all. Some are minimal, maybe wearing some green, but not much else. And then you have people that go ALL. OUT. Leprechaun hunts, tracks and treasure left behind by naughty leprechauns, gifts- the works!
Growing up, I’d say my mom did a good job of being in-between the extremes. We never did gifts or crazy leprechaun hunts or anything like that, but we always dressed in green, and my mom would serve us fun green food. I specifically remember we always had green milk! This is about the level of dedication I’ve tried to carry on with my own children. We wear green, and I try to serve fun green food all day- but that’s about as far as I get.
Whatever your level of St. Patrick’s Day celebration is, something that is sure to be used and appreciated by anyone is a St. Paddy’s day snack mix! Whether you’re using it as leprechaun bait, or enjoying it as a simple snack in March, you can never go wrong with a tasty mix! If you’ve read any of my articles in the past, you know I’m a big fan of snack mixes! They are great for parties, snacks at home, and they’re a great way to make sure everyone gets something they like! And they’re super simple to throw together. Doesn’t get much better than that!
While you can definitely follow a recipe, you certainly don’t have to! Sometimes it’s fun just to throw things together depending on your family’s tastes and what you have in the pantry! Here are some basic ideas you could throw into a festive St. Patrick’s Day mix:
- Lucky Charms (just the marshmallows, or the whole thing!)
- Green (mint) M&M’s
- Cocoa Puffs
- Golden Grahams
- Marshmallows
- Whoppers
- Nuts- peanuts, pistachios, cashews, almonds, or a mix!
- White yogurt-covered raisins
- Pretzels
- Graham cracker sticks
- Chocolate chips
- Popcorn
- Sprinkles

St. Patrick's Day Chex Mix (Pot of Gold Chex Mix) Recipe
This St. Patrick's Day Chex Mix will have you thanking your lucky stars. See the trick to making it so addictively sweet and salty.
Yield: Serves 12 (makes about 6 cups)

4 tablespoons unsalted butter
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon maple syrup
2 cups rice chex cereal
2 cups corn chex cereal
1 cup shelled pistachio nuts
1 cup wasabi peas
nonstick spray
Directions:
Step 1
Preheat oven to 300°F. Lightly coat a rimmed baking sheet with nonstick spray. Melt butter in a large microwave-safe bowl. Add soy sauce, Worcestershire, and maple syrup and whisk to combine. Add cereal and pistachios and toss until evenly coated.
Step 2
Transfer to prepared sheet and spread out in a single layer. Bake, tossing halfway through, until dry to the touch, 15 to 20 minutes. Add wasabi peas, toss, and let cool completely.

St. Patrick's Day Snack Mix Recipe
Popcorn and cereal covered in caramel mixed with green colored pretzels and M&M's make a fun, sweet and salty St. Patrick's day snack perfect for parties.

Ingredients:

4 cups popcorn, popped
3 cups corn cereal, toasted
1 1/4 cups brown sugar
3/4 cup margarine or butter
green sugar sprinkles
2 cups mini pretzels
4 block almond bark
2 to 3 drops green food coloring
1 cup green m&m’s or mint chocolate m&m’s
Directions:
Preheat oven to 400°F. In medium heavy bottomed saucepan, melt butter or margarine and brown sugar together. Bring to a boil and allow this to cook, stirring occasionally, for 7 minutes. Remove from heat. Place waxed paper on a baking sheet and spread popcorn and cereal over in an even layer. Pour caramel over popcorn and cereal, stirring with a wooden spoon to ensure all pieces are coated lightly. Bake for 10 minutes. Remove from oven and allow them to cool. Gently break apart any clumps that have formed. In a microwave safe bowl, place 4 squares almond bark. Microwave on medium heat in 30-second increments until it has melted. Stir in 2 to 3 drops green food coloring. Do not use an excess as the added moisture can cause problems in the bark hardening properly after pretzels are dipped. Using skewers or forks, dip each pretzel into melted almond bark, coating well. Place dipped pretzels on wax paper to dry and set. Once pretzels have set mix together with popcorn, cereal, and M&M’s.

Shamrock Snack Mix
Serving size: 5

Ingredients:

1 bag campfire miniature marshmallows
1/4 cup butter
3 cups mini pretzels
6 cups chex cereal
1 cup peanuts
candy-coated chocolate candy (like M&M's)
colored sprinkles
Directions:
In a very large bowl, mix all of the dry ingredients except for candies and sprinkles.
On stove top, melt butter and ¾ of the mini marshmallows.
Pour melted marshmallow into bowl over the cereal mix. Stir until coated.
Spread the snack mixture out onto a baking sheet (or two if needed). Top with chocolate candies, sprinkles and remaining marshmallows.
Allow to cool, then break apart as needed, and store in an container.
