Try This Easy and Fun TikTok Phyllo Crinkle Cake

Don’t mind me as I keep throwing awesome desserts at you for you to try and get your fill before the New Year hits and we all try to cut back on the sweets ;) Today I have got a really fun recipe for you to try. This is a cool recipe that comes from TikTok--a woman named Ramena shared her recipe for a flaky, sweet crinkle cake that is made with phyllo dough that she says is the staple of her business. She decided to share her secret recipe to TikTok and it is becoming quite a hit. It is flaky and kind of crispy (yet sticky because of the syrup) on the outside, and soft and gooey in the middle. It is so stinking good!


I saw the recipe on the Our Best Bites blog and had to give it a try. I’m going to actually post a link to the video on TikTok so you can actually see the steps in video form because it is definitely a unique recipe to make. Basically you take two layers of phyllo dough and roughly fold it accordion style in uneven layers and place in the bottom of a 9 x 13 pan.


You bake those first, as is for 10 minutes, then you pour 2 cubes of melted butter over the top and return it to the oven for 10 more minutes. While that is cooking, you prepare the custard that you will pour over the cake next. After the 10 minute butter bake, you pour the custard over the top and then bake for 30-40 more minutes, until it is golden brown. The last 10 minutes of this baking time, you will make a light syrup to pour over the top after the long bake. When it comes out of the oven, pour the syrup over the top and let it cool to room temperature before slicing and enjoying. You can serve it warm, cold, or room temperature (which is my preference!).

With Christmas and all the holidays coming up, I thought this would be a really fun recipe to share since you could totally make this as a brunch or even holiday breakfast idea. You could make it a couple days in advance and have it as part of the spread. It is honestly more like a pastry than a cake, so it goes really well for breakfast.

The fun thing about this cake is you can easily adapt it with different flavors. You can try different citrus zests in your custard, or add cinnamon or chai spices. The original, traditional recipe for this dish actually uses rosewater in the syrup and has crushed pistachios on top. The recipe I have listed below is a more mild, vanilla-flavored crinkle cake that is perfect any time or for any occasion.

Have you tried very many recipes from TikTok videos? I think they can be really fun. They are at the very least entertaining to watch--most of the recipes on TikTok seem to be really over the top things that are fun to watch other people make, but seem impractical to make yourself. I thought this one was fun to make and practical. I love the idea of having a fantastic, easy pastry-type dish to make that would be perfect for any party, shower, or weekend brunch at home.

Tik Tok Phyllo Crinkle Cake - Our Best Bites

A TikTok trend that is worth the hype! Flakey, gooey cake is more reminiscent of a pastry, and deceptively simple! Serve as a dessert, or a brunch pastry!

Yield: Yield: One 9 x 13 pan

Ingredients:
1 package phyllow dough (2 rolls)
1 cup butter, melted

CUSTARD:
1 cup milk
2 eggs
1 cup sugar
1 tablespoon vanilla extract
1 teaspoon almond extract (recommended, but optional)

SYRUP:
1 cup sugar
1 cup water
1 teaspoon lemon juice


Directions:
1. Thaw phyllo dough completely in refrigerator overnight.
2. Preheat your oven to 350 degrees. Line a 9 x 13 pan with parchment paper (if desired).
3. Working with two sheets of phyllo dough at a time (stacked one on top of the other), hang sheets from your hands and gather/fold into a loose accordion, about 1 inch thick. (Watch the video in the sources at the bottom to see a demonstration).
4. Place in prepared pan, folds facing up, and repeat until all phyllo dough has been used. Lightly adjust/fluff your phyllo accordions as needed to make sure they fill the pan loosely with no dense folds.
5. Move pan to oven and bake phyllo only, for 10 minutes.
6. Remove from oven and drizzle the melted butter evenly over the phyllo dough. Return to oven and bake for an additional 10 minutes.
7. During this second bake, prepare the custard by whisking together the milk, eggs, sugar, and vanilla extract. Hint: a large measuring container or bowl with a spout is best for this step to ease pouring. Remove phyllo from the oven and pour the custard evenly over the top. Return to oven, and bake until the top is golden and crispy, about 30-40 minutes.
8. When the baking time is nearly up, prepare the syrup. In a small saucepan over medium heat, combine sugar, water, and lemon juice. Whisk to combine and heat to a simmer. Continue to simmer until some of the moisture has evaporated and the syrup has thickened (think the consistency of maple syrup--if it’s too thin, it will result in a soggy cake). This generally takes me about 10 minutes, but could take longer depending on the pan you’re using. Remove from heat.
9. When the cake is golden and the 30-40 minute bake is complete, remove the pan from the oven and drizzle the warm syrup evenly over the top.
10. Allow cake to cool to room temperature, cut, and serve.
