The Best, Crowd-Pleasing Chili Cheese Dip

You know, I feel a little guilty because I just missed a golden opportunity of telling you about my favorite, crazy easy chip dip to make for any occasion (which would have been perfect for the Super Bowl, of course!). But really, the desire to have cheesy, comforting dip with tortilla chips doesn’t just strike once a year for the Super Bowl in February. It can happen any old time, just ask my husband. And you don’t need to look any further, my friends--this crowd-pleasing, two-ingredient recipe comes together in just six minutes!


This year’s Super Bowl is over and my son is in heaven as an LA Rams fan. (I always thank heaven he picked a good team to be a fan of instead of my husband’s Raiders, bless his always aching heart! ;-D ) However, I think there was even better news this year to celebrate than the Ram’s victory. Can we all just take a moment and appreciate the fantastic news that we don’t have to ever see Tom Brady in another Super Bowl? Best news ever!!! I think there are many fans like me who are quite thrilled at the idea. So thrilled they just might go out and make some delicious cream cheese chili dip just to celebrate! 


The funny thing about this chip dip is that it is the easiest recipe there is and I have had it memorized since I was about 10 years old, and yet I completely forgot about it until this year. My husband was positively aghast that I just barely pulled this jewel of a simple-but-amazing recipe out of my repertoire after 13 years of marriage! How could I keep this amazing secret from him all these years? I don’t know either. It was just back in some distant corner of my memory and one game day afternoon he said just wished we could have some chips and dip and it came to me ¯\_(ツ)_/¯

This recipe was introduced to me from a youth church group we did when I was about 10 years old. We had activities we did together every week with girls our age and we begged our leader to make us this snack every week. She was so kind and always obliged. A cute funny memory I always think about when thinking of this same woman and our little church group was that this woman was the owner of the mortuary in our small town. Every Wednesday she would pick us all up from our school in a “limo”, or so we thought it was. We would wave our hands out the windows like pageant queens and be so proud to be riding around in this fancy limousine, which was of course a hearse ha! Oh, the funny things you do growing up in a small town that nobody thinks are strange :) 


So, back to the dip. All you need to know is that you simply need one package of cream cheese and one can of good quality chili. I really like the Nalley brand chili if you can get it in your area, or here in my area I love to get the Stagg brand chili from Walmart. You add both of those to a bowl and heat it up in the microwave for 5 minutes. Then stir it all together and voila! Your dip is ready just like that.


You can dip into it with regular corn tortilla chips or even Fritos Scoops if you really want to be decadent. It is my favorite new-to-me-again appetizer to have in my arsenal because I always have these two ingredients on hand and everyone loves it. 

A couple other variations I have read from people’s comments on recipes online:

  • Add a pound of ground beef
  • Add a can of green chilies to make it a bit more spicy
  • Use a package of Velveeta instead of the cream cheese, but follow all directions the same 
  • Top with chopped jalapenos

Ingredients:
1 (8-ounce) package softened cream cheese
1 (15 oz can) high quality chili ( I like Hormel or Dennison )


Directions:
Warm ingredients until blended in a pot on the stove or in the microwave for 4-5 minutes. Serve with corn chips (Fritos) or tortilla chips.
