My Revolutionary Tip for Your Favorite Potato Salad Recipe
Memorial Day is May 30 this year, which I feel is kind of the official kick-off of summer and grilling season and I really feel I have a revolutionary tip to share with you today. We are going to start a new food trend here and sweep the nation, nay, the world with this!
Okay, this might be taking things a little far, but really I just want to share a delicious combo that I have been doing for years, (as a bit of a secret indulgence, really), but I think it’s time the world knows about this. It’s just too good not to share.
You see it all started on July 5, 2017. I had made my usual giant two bowls of potato salad, which is the food I am most known for bringing to any pot-luck event. Every time I make it I go big and make two giant bowls. I figure it’s because if I’m going to go through all the trouble of making it, I might as well make a ton, especially since my family loves it so much too. Do you have a recipe like this that you always make a giant batch of every time you make it?
So here I am, slightly sunburnt and exhausted from all the hot, sun-beaten fun front the day before full of parades, swimming, S’mores-making, and fireworks. There is nothing quite the like celebrating the Fourth of July in small towns that go all out here in America.
I get the inspired idea to dish up a bowl of potato salad, add my crispy bacon bits on top, a fresh grind of salt and pepper and grab a handful of my favorite potato chips: Ruffles cheddar and sour cream. I realize I have forgotten to grab a spoon and come to know that this might be the best decision I have ever made. In a pinch, I decide to grab a chip and dip right into the potato salad. A new revolution is born.
This becomes my new lunch every day until the sad day that the potato salad leftovers are gone. I never tell my husband, for reasons I can’t explain, but I so look forward to this quiet moment every day where I eat this beloved lunch that is the best combination ever! I think I haven’t told my husband this idea all these years because it feels a little gluttonous, perhaps. It’s a different idea--I don’t think it’s a common thing, but I’m telling you, you need to try this this year!
And you don’t need to stop at just potato salad and Ruffles cheddar and sour cream chips, either! Just the other day, I introduced my daughter to this new revolutionary lunch by dipping Cool Ranch Doritos into a lovely macaroni salad from the grocery store deli. It was also divine! I don’t know what magic they put in Cool Ranch Doritos, but they are so stinking good and go great with anything!
So, this is the year I gathered my courage and decided to share this secret, indulgent, perfect summer snack or lunch with you, my friends. Dare I say, I might even be so bold as to just add a bowl full of potato or macaroni salad right there next to the spread of potato chips as if it were the standard ranch or french onion chip dip and tell people to go ahead and try it. “Don’t knock it until you try it”, I’ll say.
Have you ever tried this combination before with a cold summery salad like potato or macaroni salad and your favorite chips? This is probably not quite as revolutionary as I think, but I tried Googling it and I couldn't find anyone talking about this--not even in the depths of Reddit threads.
