Try Making This Delicious and Easy Chicken Chow Mein This Week!

Something I feel like I could eat any night of the week would be a big bowl of ham fried rice or chow mein noodles. Especially in the winter, it just feels like one of those cozy, flavorful meals that you could never go wrong with. Natasha’s Kitchen has done it again with this 5-star recipe for chicken chow mein with the BEST sauce to go with it! It really is so easy--don’t let that little voice in your head tell you it’s too complicated to make Chinese food at home. Plus, it is healthier at home and you can control the sodium levels and whether or not MSG is added :)

Substitutes for This Recipe

The great thing about this recipe is that it can be made with plenty of things you likely already have on hand, so there are plenty of options for substitutions if you don’t have specific ingredients, right down to the noodles!

Veggies: This original recipe contains cabbage, green onions and carrots, but can easily be replaced with veggies like broccoli, celery, bok choy, spinach, kale or baby corn. This is great way to use up any veggies you have in the fridge right now.

Chow Mein Noodles: You should be able to easily find chow mein, or even lo mein noodles, on the aisle with Asian food in your local grocery store. You might even be able to find pre-cooked chow mein noodles in the refrigerated section, but if not you can actually use rice noodles, or even spaghetti noodles and you won’t even be able to tell the difference! There is very little difference between spaghetti noodles and chow mein noodles.

Meat: This recipe obviously uses chicken as the main protein for the meal but feel free to substitute with shrimp, beef or pork instead.

Vegetarian: You can easily adapt this recipe for vegetarians and use vegetable broth to make the sauce and fry up chopped tofu or even chopped mushrooms instead of the other protein options. It would be delicious!

Do you make Chinese food at home or do you mostly save that for your favorite take-out place? I know the Chinese entree options like orange chicken or beef and broccoli are so delicious and hard to want to pass on, but honestly sometimes I have a craving to just eat a big serving of ham fried rice or chow mein. This chicken chow mein recipe is so filling with the chicken added and is the perfect meal your whole family will love!

3 tablespoons oils
12 ounces chow mein noodles, (uncooked noodles)
2 cups cabbage
1 large carrot, julienned
1/2 batch green onions

CHOW MEIN SAUCE:
2 garlic cloves
6 tablespoons oyster sauce
3 tablespoons low sodium soy sauce
3 tablespoons light sesame oils, (not toasted)
1/2 cup chicken broth
1 tablespoon cornstarch
1 tablespoon granulated sugar

Directions:
In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.

Cook your noodles according to package instructions then drain, rinse with cold water and set aside.

Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.

Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.

Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.

Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!
