Ingredients:
3 pounds medium potatoes, peeled
2 teaspoons salt, divided
1 cup butter
6 garlic cloves, minced
1 cup whole milk, warmed
1/2 teaspoon pepper
2 tablespoons minced chives, optional

Directions:
Place potatoes in a stock pot; add water to cover. Season water with 1 teaspoon salt; bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain and return to pan.

Meanwhile, place butter in a medium skillet. Cook over medium heat until golden brown, 5-7 minutes, stirring occasionally. Add garlic during the last minute of cooking, stirring constantly. Set aside.

Gently mash potatoes while gradually adding milk and browned butter with garlic to reach desired consistency. Stir in remaining 1 teaspoon salt and pepper. Serve with chives, if desired.
