The Food Craving That Took Me a Year to Satisfy!
Have you ever had a food craving so strong that you waited an entire year to satisfy it? Well, that's exactly what happened to me!
Last year, while visiting my mom, she asked if I wanted some corned beef. I said, "Sure!" She heated up some leftovers, and WOW—I was blown away! Those sweet, tender, long carrots (not the baby ones), the perfectly seasoned cabbage, the soft-boiled potatoes, and that salty, melt-in-your-mouth corned beef—every bite was comfort on a plate.
As I drove home, I marveled at how delicious that meal was and wondered why that food tasted so amazing to me. Was it nostalgia? I remembered eating it at home as a kid, but I hadn’t had it since. Kathy has never made it, and I’ve never seen it on a restaurant menu.
Inspired, I made a note in my phone to add it to my Cook'n meal plan. But when I went to the grocery store next, I couldn't find corned beef anywhere!
I called my mom to ask where to buy it, and that's when I learned the shocking truth: corned beef is a seasonal food that only appears around St. Patrick's Day. Doh!
After waiting a whole year, I finally found some corned beef at the store. I bought it immediately and called my mom for cooking instructions. I made a huge pot...

...and it turned out AMAZING!

As you can see in this photo, the dogs hovered nearby, hoping he’d drop a bite (which isn’t that uncommon, honestly).

Even my son, Jackson, and his wife, Kenzie, loved it. Kenzie went back for seconds, which is impressive because she’s pregnant and has been feeling nauseous most of the time. When it came to this corned beef, though, she couldn't get enough!

I couldn't resist a second helping either. This time, I ate it from a bowl and mashed the potatoes into the broth, turning it into a hearty stew. Yum to the YUM YUM!

I called my mom back to rave about how perfectly it turned out. That’s when she let me in on a game-changing tip: you can buy corned beef now and freeze it for later, so you don't have to wait an entire year. Genius!
So, yesterday, I made a quick Costco run and bought three more to stash in the freezer. Woohoo! That oughta hold me for a while!
