Caesar Salad

This is a classic recipe that includes chopped romaine, crunchy croutons, shaved Parmesan cheese and a homemade Caesar salad dressing.

Ingredients:
3 large pasteurized eggs yolks
2 garlic cloves
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon anchovies paste
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
Dash hot pepper sauce, optional
1/2 cup olive oil
1/4 cup grated Parmesan cheese
SALAD:
2 large bunches romaine, chopped
1 cup salad croutons
1/4 cup shaved Parmesan cheese

Directions:
Place first 9 ingredients in a blender; cover and process until smooth. If desired, add hot sauce. While processing, gradually add oil in a steady stream. Stir in Parmesan cheese. Chill until serving.

Place romaine into large salad bowl. Drizzle with dressing; toss to coat. Sprinkle with croutons and parmesan.
