Serves: 5
* Don't fill cake pans more than 3/4 full of batter the batter may spill over as it expands during baking.
* Make sure there are at least 2 inches between cake pans in the oven, so air can circulate and cakes will be evenly baked.
* What makes a cake fall? Sudden changes in temperature or movement of the cake. Try not to open the oven during the first 15 minutes of baking, and not much after that, either. Close the oven door gently, if you do open it.
