Coconut Candy Bahian Style

Ingredients

4 cups sugar
1 cup water
3 cups grated coconut
1 tablespoon lemon juice

Directions:

Mix together sugar and water and boil until it reaches a firm ball stage. Add grated coconut and lemon juice.

Cook until it pulls away from the edge of the pan and holds its shape. Pour into a buttered cake pan and cut into squares. More typically, the women in the North of Brazil would drop from a spatula onto waxed paper and allowed to cool.
