In a large, heavy skillet, heat the oil over medium-high heat. Add garlic and onion and sauté 4–6 minutes. Stir in the mushrooms and sauté 2 minutes. Add the ground beef and cook until browned and excess moisture has evaporated. Stir in the tomato puree, wine, tomato paste, and bay leaves. Season with salt and pepper and simmer over medium-low heat for 20–30 minutes.
While the sauce simmers, cook pasta according to package directions. When pasta is done, drain and toss it lightly with oil. Place in a large decorative pasta bowl, top with the Bolognese sauce and sprinkle with the Parmesan cheese.
