Easy Lasagna

Ingredients

2 cups ricotta cheese
3/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh or 1 1/2 teaspoons dried oregano leaves
8 cups (1/2 recipe) Italian Spaghetti Sauce or purchased spaghetti sauce
12 uncooked lasagna noodles
2 cups shredded mozzarella cheese (8 ounces)

Directions:

1. Heat oven to 350°. Mix ricotta cheese, 1/2 cup of the Parmesan cheese, the parsley and oregano.

2. Spread 2 cups of the Italian Spaghetti Sauce (this Cook'n chapter) in ungreased rectangular pan, 13 x 9 x 2 inches top with 4 of the noodles. Spread cheese mixture over noodles. Spread with 2 cups spaghetti sauce and top with 4 noodles repeat with 2 cups spaghetti sauce and 4 noodles.

3. Sprinkle with 1 1/2 cups of the mozzarella cheese. Spread with remaining 2 cups spaghetti sauce. Sprinkle with remaining 1/4 cup Parmesan cheese.

4. Cover and bake 30 minutes. Uncover and bake about 30 minutes longer or until hot and bubbly. Sprinkle with remaining 1/2 cup mozzarella cheese. Let stand 15 minutes before cutting.

TO MAKE AHEAD: Wrap unbaked lasagna tightly with aluminum foil and label. Freeze no longer than 2 months. About 2 hours before serving, heat oven to 350°. Bake in covered pan 45 minutes. Uncover and bake 15 to 20 minutes longer or until hot and bubbly. Sprinkle with mozzarella cheese. Let stand 15 minutes before cutting.
