Grate zucchini into a medium mixing bowl. Combine remaining ingredients and stir well to combine. Heat a Dutch oven lid over medium heat and lightly oil when iron is hot. Scoop about 1/8 cup batter (2 Tbs.) for each fritter and cook 2 to 3 minutes until lightly browned and edges of fritter have dried. Turn over with a spatula and cook for 2 minutes more. Serve with chicken gravy, sour cream, horseradish sauce, butter, or any combination of your choice of toppings.
