Broccoli Soufflé |

1 cup cottage cheese
3 eggs
1 1/2 cups broccoli cooked, chopped (about 1 pound)
3 tablespoons flour
1/4 cup butter or margarine, melted
1 cup sharp cheddar cheese grated
Salt and freshly ground pepper to taste
1 tablespoon onions minced

Heat oven to 350° F. Place cottage cheese in bowl; add eggs and blend well. Add broccoli and blend; sprinkle flour on top and mix well. Add butter or margarine and 1/2 cup cheese, salt, pepper, and onion; mix well. Put into greased 1-quart soufflé dish and sprinkle remainder of cheese on top. Bake for 30 to 40 minutes or until done.
