Cherry Tomato And Mushroom Stir-Fry

Ingredients

1 tablespoon safflower oil
1 tablespoon butter real
2 shallots minced
4 green onions minced
2 tablespoons parsley minced fresh
1/2 teaspoon basil dried, crushed
1/2 pound mushrooms washed and sliced
3 cups cherry tomatoes
Salt and freshly ground pepper to taste

Directions:

Place oil and butter in a heavy skillet over medium-high heat. Add shallots, green onions, parsley, and basil stir-fry 2 minutes. Add mushrooms stir-fry 3 to 4 minutes. Add cherry tomatoes and salt and pepper to taste gently shake pan and cook for 3 to 4 minutes or until well-coated with spices and heated through. Serve immediately.
