In a stockpot place chicken, broth and herbs. Quarter lemon and add enough water to cover the chicken. Simmer until chicken is cooked.
Pesto:
Place 1/3 of the olive oil in a food processor or blender and add all remaining ingredients.
Blend until smooth add the remaining olive oil and blend to incorporate.
