Place chocolate and shortening in a small saucepan. Melt over very low heat. Stir until blended.
Line a shallow bowl with plastic wrap. Pour in the melted chocolate and spread evenly. Refrigerate until firm.
Remove chocolate from the bowl and peel off plastic wrap. Use a swivel-type vegetable peeler to shave off thin curls onto waxed paper. For larger curls, use a very sharp knife or a cheese plane.
Move the finished curls with a wooden pick to avoid melting from the warmth of your fingers. Leftover pieces of chocolate can be shredded or grated. Cover chocolate loosely and store in the refrigerator. Use to garnish chocolate desserts.
