Preheat oven to 325°. Place foil-laminated baking cups in muffin-pan cups (2 1/2 inches in diameter).
Place one vanilla wafer in bottom of each baking cup.
Place cream cheese and sugar in a small mixer bowl. With an electric mixer, beat at medium speed until smooth. Add egg and vanilla. Beat in melted chocolate. Fill each baking cup almost full with cheese mixture.
Bake 20 to 25 minutes or until set. Cool 5 to 10 minutes. Spread a teaspoonful of the Sour Cream Topping on each. Place muffin pan on a wire cooling rack until completely cool. Refrigerate.
Just before serving, top each cheesecake with mini chips or Chocolate Curls, if using.
SOUR CREAM TOPPING: Place 1/2 cup dairy sour cream or nonfat yogurt, 1 tablespoon sugar, and 1/2 teaspoon vanilla extract in a bowl and stir until sugar dissolves.
