Beat together 1 cup plus 2 tablespoons flour, salt, egg yolk, milk, and oil just until well-moistened. Beat egg white until soft peaks form and fold into flour mixture. Coat separated onion rings with additional flour then dip in batter. Fry a few at a time in deep hot fat (375° F), stirring once to separate rings. Drain on paper towels sprinkle lightly with salt and serve.
Note: May be kept warm in a low oven.
