Peel peaches by dipping into boiling water for 30 seconds to 1 minute. Remove and drop into cold water (skins will slip off). Slice peaches and place in large saucepan. Add optional sugar and bring to boil slowly, stirring until sugar is dissolved. Pour into blender or food processor purée. Cool to lukewarm. Place a sheet of plastic wrap over jelly roll pan and spread 1/8 - to 1/4 -inch thick. Place in preheated 200° oven. Turn off oven and keep leather in oven for 2 days, giving oven a shot of heat every so often. When leather peels off plastic easily, it is dried. Cut into 2 x 5-inch strips. Roll to store if desired.
