In a medium bowl, mix pork, water chestnuts, green onions, salt, and pepper until well combined.
Place about 1 teaspoon of the filling in center of a wonton wrapper. Moisten edges with egg. Fold into a triangle, enclosing filling. Press edges to seal. Carefully pull side points together over filling, moisten with egg, and pinch to seal. Place on a tray or wax paper. Repeat with remaining filling and wrappers. Do not allow wontons to touch each other.
In a heavy saucepan or Dutch oven, heat 2 inches of oil to 365°. Fry wontons, 4 or 5 at a time, until browned, turning once. Drain on paper towels. Keep hot in warm oven.
Serve with sweet and sour sauce.
