In a medium saucepan, cover cauliflower with water. Over medium-high heat, bring to a boil and cook 5 minutes or until crisp-tender. Remove with a slotted spoon and place in a 2-quart shallow bowl or casserole. Repeat with green beans and carrot, cooking 5 minutes or until crisp-tender drain and add to cauliflower. Add mushrooms and zucchini.
Place oil, lemon juice, 2 tablespoons water, onion, sugar, garlic, oregano, salt, and pepper in a blender container. Cover and blend until uniform. Pour marinade over vegetables and toss to coat. Cover and refrigerate at least 4 hours or overnight, stirring occasionally.
To serve, add olives and toss to mix well. Drain and spoon small portions onto lettuce on individual plates.
