Place ham with liquid in a small bowl. With a fork, stir together, breaking ham into smaller pieces. Stir in cucumber, mayonnaise, chopped parsley, and pepper until blended.
Spread cream cheese on cut sides of open croissants. Mound ham mixture on each bottom half, top with lettuce, and top half of croissant. If desired, place one orange wedge and sprig of parsley on each of three wooden sandwich picks insert in each sandwich.
*One cup diced ham can be used.
Serve with celery hearts, olives, and a bowl of cherries or berries.
