Herb Butter for Canapés |

1 cup butter softened
6 tablespoons parsley finely minced fresh
1 teaspoon tarragon dried tarragon leaves or 1 tablespoon minced fresh leaves
1/4 teaspoon black pepper

In a small mixer bowl at medium speed, beat butter until fluffy. At low speed, beat in parsley, tarragon, and pepper until well blended.
To use, spread on crackers or bread as a base for canapés. Some combinations are:
* rye cocktail bread or rye crackers spread with 1 tablespoon Herb Butter, topped with a piece of smoked salmon, finely chopped red onion, and a dill sprig.
* wheat or sesame crackers spread with 1 tablespoon Herb Butter, topped with cooked salad shrimp, a dill sprig, and a small slice of lemon.
* thinly sliced baguette spread with 1 tablespoon Herb Butter, topped with thinly sliced radishes, a sprinkle of salt, and chopped chives.
These can be made up to 2 hours before serving. Cover with foil and refrigerate.
