Lightly toast bread. For each sandwich, spread 1 tablespoon of the mayonnaise on one side of bread. Top with lettuce, then chicken, cheese and cranberry sauce.
Garnish with parsley sprigs. Serve with a knife and fork.
*Jellied cranberry sauce can be cut in a decorative shape with a small cookie cutter or sharp knife if desired.
