Cream shortening and sugars together until fluffy. Beat in eggs and vanilla. Add flour and salt. Add soda that has been dissolved in hot water blend. Stir in rolled oats, and nuts. Drop by teaspoonfuls onto ungreased baking sheet about 1 1/2 inches apart. Bake at 375 degrees F. for 10 minutes or until barely brown and still a little puffy. For crisper cookies bake until cookies flatten. Makes 3 dozen cookies. Recipe may be doubled.
Note: Coconut or raisins may also be added to this basic cookie dough.
Variation
Chocolate Chip Oatmeal Cookies: Add 1 package (6 ounces) chocolate chips with the oats and nuts.
