In a 1-quart saucepan, sprinkle gelatin over milk let stand for 1 minute. Add sugar. Cook and stir over low heat until gelatin is dissolved.
Stir in milk, almond and vanilla extracts, and food color. Pour into four 6-ounce custard cups or dessert dishes. Cover and refrigerate at least 2 hours or until set.
In a small saucepan, mix water, orange juice concentrate, sugar and cornstarch until smooth. Stirring over medium-high heat, bring to a boil and boil for 1 minute. Refrigerate until cold.
To serve, stir orange sauce and spoon over custard in cups. Garnish each with 3 orange segments.
