Cook ground pork in skillet without oil for 5 minutes or until well cooked drain off excess grease. Place in bowl with tuna, ginger, red onion, garlic, salt, lime rind and juice, coconut, peanuts, chili powder, and coriander blend well. Add mayonnaise and blend if necessary, add more mayonnaise to make a moist consistency. Chill. (Ginger flavor increases with length of refrigeration time.) Place 2 tablespoons filling in each half of pita and top with shredded lettuce.
